Now I love getting dressed up and going out for a fancy meal as much as the next girl, but sometimes when you finish work you just want a no frills meal that’s not going to take hours to make – enter my go to, no fuss bacon cheeseburger that’s ready in under half an hour, perfect for those lazy days.
Ingredients (makes 4 burgers):
Burgers:
- 500g of high quality organic beef mince, I used 15% fat
- 1 egg
- 1/2 tbsp garlic seasoning
- Salt & pepper to taste
- 12 rashers of streaky bacon
- 4 Cheese slices
Hash Browns:
- 4 Large white potatoes
- 1 egg
- 1 tbsp all-purpose flour
- Salt & pepper to taste
Step 1:
In a large mixing bowl combine the mince, 1 egg, salt & pepper and garlic seasoning. Once everything has been mixed together, form into burger patty’s. To do this, form a ball roughly the size of your palm and flatten.
Step 2:
You can easily leave this step out, but it’s so quick to do and in my opinion makes all the difference! Start by grating 4 potatoes into a bowl, rinse with ice-cold water and then wring them out to get rid of excess water and starch (this makes them crispy) to the potatoes then add one egg, the flour and salt and pepper. Heat up some oil in a small pan and add your mix, stirring occasionally until golden brown. Transfer into a baking dish and finish off in the oven.
Step 3:
It’s now time to cook the burgers and, I like mine cooked medium (only do this if you are sure your mince is of a high quality and fresh!) It usually takes roughly 3 minutes on each side, depending on the size of the patty’s. At this time, pop your bacon in the oven to cook. Then it is time to assemble any way you like! Add salad if you wish and your favourite sauce and you’re ready to go, for a quick and simple midweek treat!
